My Favorite Sweets
In a previous post, I told you I like to bake. I thought I would share with you my three favorite holiday recipes. They are always around the Heynen house in December. By the way the cookies in the picture are ceramic.Peanut Butter Balls
1 cup Peanut Butter
1 cup Butter, softened
1 cup Rice Krispies
1 cup Coconut
Mix the peanut butter, butter, and rice krispies together. Form into balls and roll in coconut. I like to store mine in the refrigerator and then put them on a plate for parties.Peppermint Patties
3/4 cup sweetened condensed milk
1 1/2 teaspoons peppermint extract
4 cups confectioner's sugar
3 cups semisweet chocolate chips
2 teaspoons shortening
Mix the milk and peppermint extract together in a bowl. Start adding the powdered sugar a little at a time. Keep adding the sugar until the mixture becomes a stiff dough that is no longer sticky. Roll into 1 inch balls and flatten with your hands. I put them on wax paper on a cookie sheet and let them dry out for a couple of hours. Turning them over half way through will help.
In a separate bowl melt the chocolate chips. Add the shortening and stir until smooth. With a fork dip the patties into the chocolate. Lay them back onto the waxed paper to cool.
